**This recipe is for one serving, so multiply accordingly to accommodate the number of mouths you are feeding!**
Great Pairings
Have these as a side with grilled chicken, grilled steaks, broiled salmon, baked eggs, scrambled eggs, and more!
I'll add some recipes for good pairings as I go along.
Ingredients:
5-6 mini medley potatoes.
1 tbs extra virgin olive oil
1 tbs black pepper
2-3 tbs McCormick Roasted Garlic Seasoning
1 tbs fresh minced garlic
Instructions:
Preheat Oven to 400ºF
Prepare a small baking sheet with aluminum foil and coat with cooking spray; set aside.
Chop the potatoes into quarters and place in medium bowl. Drizzle olive oil and add spices; toss until well coated. Transfer the potatoes to baking sheet. Place in Toaster Oven for 45 minutes at 400ºF.

Test to make sure they are done. They should be tender to a fork, and slightly golden brown around the corners, with a crispy texture.
