Spice Rubbed Recovery

Someone asked me for recipes they could turn to after working out. Something that could help them recover and rebuild muscle. Well, I'm sure that most people are thinking that steamed veggies and grilled chicken, or peanut butter on a celery stick with raisins might be the first option.
When you are breaking down your muscles during workouts, and just during your normal day to day routine, you need to fuel your body with protein. Fuel it with healthy fats, give yourself some iron, some fiber. Just pick out a meal that is made entirely from raw ingredients which still have their nutritional integrity intact.

This pork tenderloin gives you a break from the poultry rich diet of health food magazines, and is just as lean, with wonderful amounts of flavor and nutritional substance.

Herb Crusted Pork Tenderloin with Roasted Asparagus

Ingredients:

• 3-4 oz. pork tenderloin
• 1 tsp extra virgin olive oil
• 1 tsp garlic powder
• 1/2 tsp McCormick Italian Seasoning (basil, thyme, oregano, sage)
• 1/4 tsp paprika
• 1/4 tsp crushed red pepper
• 1/4 tsp black pepper
• pinch of salt

• 8-10 stalks of asparagus
• 2 tsp extra virgin olive oil
• 1/2 tsp garlic powder
• black pepper
• pinch of salt

Instructions:

Preheat oven to 400ºF.

Prepare a rimmed baking sheet with aluminum foil and cooking spray.

In a plastic baggy, combine pork, olive oil, and spices for the tenderloin. Seal the bag and shake it to evenly coat the tenderloin with the spices. Place the Tenderloin on one side of the baking sheet and place in the oven. Roast for 5 minutes. 

While the Pork is beginning to cook, trim the base of the asparagus stalks off (about 1 inch off of the bottom) and get your spices ready. After the pork has been cooking for about 5 minutes, remove the baking sheet from the oven and place the asparagus on the opposite side of the pork. drizzle the olive oil over the asparagus and then sprinkle your spices evenly over the stalks.

Place back in the oven and continue to roast for another 20 minutes.

Pork total cook time (25 minutes - or until internal temperature is 160ºF).

Remove the baking sheet from the oven, and plate your meal. Pair with a tossed salad of spinach, tomato, mushrooms, carrots, or any other raw vegetables you enjoy, and eat up!
